July 4th. Fourth of July

I know I'm a few days late with this one, but it was Fourth of July (AKA American Independence Day) and things were REEEAAALLL busy.  I wanted to show you all the cake I made for a BBQ I went to earlier in the day.  I'd had some requests from friends for a cake and you know how I'll take any excuse to bake something new and different, so I went for it.  My requirements were that 1) It was easy to make (it's the summer and things get busy guys) and 2) It had to scream AMERICA!  So I made a white box cake (gasp) with an extra package of vanilla pudding mix, separated it into thirds and colored two of the layers blue and red.**  After they were cooked, I cut them in half and made a six layer red, white and blue cake with cream cheese frosting.  I'm not gonna lie guys, it was good.  And a little tacky looking, so really all the better.

**A note on the food coloring:  I used food coloring gel as it is more concentrated and doesn't affect the texture of the batter.  Also, the trick to getting a truer red is to add a small amount of black along with it, otherwise it can become an odd orange-y color.

As someone who ate the cake, I can concur, it tasted gooood! But I LOVED the colors too! BLUE was especially nice!

The site looks AWESOME Rosie - just clicked around and love it! Good job!

Hey Katie! I just posted about my cake too! I am definitely going to have to experiment with food coloring - mine didn't turn out QUITE right, but it wasn't a complete disaster like I feared. Maybe someday soon I'll tackle the multi-colored like you did!

Don't call me a hater BUT "blue food" is not to be eaten unless it grows "blue" in nature. Only blueberries, eggplant come to mind and they are truly purple.
Fun but not palatable... T
